Vegan Passionfruit Yoghurt Slice
Gluten, Dairy, Egg, Nut and Refined Sugar Free – Vegan Friendly
A delicious soft and moist slice that is a loved snack or addition to your lunchbox.
INGREDIENTS:
- 230g gluten free flour (2 cups)
- 40g arrowroot flour/tapioca flour (¼ cup)
- 1 ½ teaspoon baking powder (aluminum free)
- ½ teaspoon salt
- 135g coconut sugar (1 cup)
- 175g coconut yoghurt (¾ cup)
- 70g extra virgin olive oil (⅓ cup)
- 1 teaspoon vanilla
- 3 tablespoons coconut milk*
- 3 x passionfruit (pulp only)
- zest 1 x orange****
METHOD:
- Preheat oven to 180 degrees.
- Place all dry ingredients into a large bowl and mix together.
- Place all wet ingredients (excluding passionfruit) into a bowl and mix together.
- Combine wet ingredients to dry ingredients and stir.
- Add in passionfruit.
- Pour mixture into lined baking tray (approx 30cm x 18cm).
- Cook for 30 minutes.
- Remove from oven and allow to cool before removing from the tray and cutting into required portion sizes. (see notes if cutting straight away).
NOTES:
* Make sure to use full-fat coconut milk.
** Tip: It makes it easier to cut the slice by placing it in the fridge for 30 minutes beforehand.
*** This can be stored in the freezer in portion sizes and taken out and defrosted before eating.
**** If possible, use an organic orange to avoid eating the spray from the skin.
