Pulled Pork





I love a slow cooker meal and pulled pork is no exception. Extremely tender with a just the right amount of spices for the delicious sauce this will make your week-night cooking or cook-for-a-crowd hassle free.



INGREDIENTS:


  • 2 tablespoons coconut oil
  • 1.2-1.5kg pork butt (or pork shoulder if you can’t find)*
  • 1 x leek finely sliced (white part only)
  • 1 x teaspoon ground cumin
  • 1 x teaspoon ground paprika (smoked)
  • 1 x teaspoon onion powder
  • 1 x teaspoon ground garlic
  • 2 x tablespoons ground turmeric
  • 2-3 teaspoons himalayan salt
  • cracked pepper to taste
  • 1 cup stock
  • Β½ cup coconut aminos




METHOD:


  1. Wipe bowl of slow cooker with coconut oil.
  2. Place all ingredients into slow cooker and turn on high for 6 hours, or low for 12 hours
  3. Remove meat from slow cooker and pull apart with two forks, placing back into slow cooker once done, this should be very easy to do as the meat should be nice and tender. Stir pork through juices.
  4. Place slow cooker on lowest mode until ready to eat or eat straight away.



NOTES:

* The pork butt and pork shoulder, both come from the shoulder of the pig. Pork butt is higher up on the animal and contains more connective tissues, whereas the shoulder contains more muscle. Pork butt is generally a cheaper cut and suited to slower cooking.
