Gluten, Dairy, Egg, Nut and Sugar Free β€“ Vegan Friendly




Sultana Cinnamon Slice




INGREDIENTS:

  • 230g gluten free flour (2 cups)
  • 40g arrowroot flour
  • 3/4 teaspoon bicarbonate of soda
  • 3/4 teaspoon salt
  • 135g coconut sugar (1 cup)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 cup chopped sultanas
  • 80g extra virgin olive oil
  • 1 1/2 cups coconut milk*
  • 1 1/2 teaspoon vanilla
  • 2 tablespoons apple cider vinegar


METHOD:

  1. Preheat oven to 180 degrees.
  2. Place all dry ingredients into a large bowl and mix together.
  3. Place all wet ingredients into a bowl and mix together.
  4. Combine wet ingredients to dry ingredients and stir.
  5. Pour mixture into lined baking tray (approx 30cm x 18cm).
  6. Cook for 35 minutes.
  7. Remove from oven and allow to cool before removing from the tray and cutting into required portion sizes. (see notes if cutting straight away)




NOTES:
* Make sure to use full-fat coconut milk.
** Tip: It makes it easier to cut the slice by placing it in the freezer for 30 minutes beforehand.
*** This can be stored in the freezer in portion sizes and taken out and defrosted before eating.
