Slow Cooker Lamb Curry

Gluten, Grain, Dairy, Egg, Nut and Sugar Free




If you haven’t been using your slow cooker, it’s time to get it out and make some easy nutrient dense meals. If your idea of cooking is sit and forget than this recipe is for you!

Slow Cooker Lamb Curry




INGREDIENTS:

  • 800g diced lamb
  • 1 x leek finely chopped (white part only)
  • 2 x cloves garlic diced
  • 2 x celery sticks diced
  • 3 large carrots chopped
  • 2-3 Tblspn curry powder (see notes)
  • 1 Tblspn ground turmeric
  • 1 x pinch chilli powder (optional – to taste)
  • 1 x can coconut cream (270ml) see notes
  • 500ml water
  • Salt and Pepper to taste

METHOD:


  1. Place all ingredients into slow cooker and cook for 6-8 hours on medium.
  2. Serve with rice, steamed veggies or broccoli and cauliflower rice.


NOTES:

* I make my own curry powder. You can find the recipe here.
* I use Ayam brand of coconut cream as it contains no preservatives or additives
* This meal can be frozen and reheated.
