Homemade Mayonnaise





There is nothing quite like homemade mayonnaise.

It is serious one of the easiest things in the world to make!! If you have a stick blender you will have it made in 30 seconds – seriously that’s all the time it will take you!!

I am lucky to have a thermomix but would say hands down it is so much quicker and easier to make using a basic stick blender!!

My recipe contains nothing but wholefoods and is grain and dairy free, Have you had a look at the back of a jar of mayonnaise at the supermarket – it is seriously scary the ‘ingredients’ that are included – from the refined oils, protein concentrates, food additives and flavours and vegetables gums the list keeps on going – how is this classified as ‘food’? Beats me!! My recipe only contains a total of 5 real ingredients. And only cost about $2.50 for a 375g jar to make. It doesn’t cost alot of money to eat healthy!


FOR THIS TO EMULSIFY AND COMBINE WELL ALL INGREDIENTS NEED TO BE AT ROOM TEMPERATURE

I’ve included a video to show how easy it is to do.



INGREDIENTS:

  • 280ml Extra Virgin Olive Oil (I use Colbram light flavoured oil)*see notes
  • 1 egg (must be at room temperature)
  • 1 1 /2 tsp Apple Cider Vinegar
  • 3/4 tsp himalayan salt
    Add for flavours –
  • 1/2 clove garlic (or more if you’d prefer)
  • 1/2 tspn dijon mustard/mustard seeds
  • pepper to taste

METHOD:


  1. Place all ingredients into a clean 375ml jar.**
  2. Put stick blender in the bottom of the jar and keep at the bottom for about 10-15 seconds until egg and oil begin to emulsify.
  3. Slow raise the blender up towards the top of the jar and then move the blender up and down to mix in the rest of the ingredients
  4. Take the blender out of the jar and give a quick stir.
  5. Place on lid and store in the fridge for up to a week.




NOTES:

* I like to use Colbram Light Extra Virgin Olive Oil, as there isn’t an over powering taste of the olive oil in it. Avocado oil has a neutral flavour also as does High Oleic Sunflower Oil, Please try to avoid highly processed oil which have negative health benefits.
** Make sure the width of the jar fits the head of the blender in without too much extra room. You may have trouble with it emulsifying.
