Roasted Button Squash





For nutritional purposes, it’s important to add a wide variety of fruits and vegetables into your diet. One way I like to do this is by roasting, and the button squash is no exception!!



INGREDIENTS:


  • 1/2 kg button squash
  • 1-2 tablespoon of nutritional yeast*
  • salt and pepper (optional)
  • extra virgin olive oil





METHOD:


  1. Preheat oven to 200Β°C (fanforced)
  2. Cut button squash into bite sized pieces, place into small bowl.
  3. Sprinkle with nutritional yeast and salt and pepper (if using).
  4. Drizzle with olive oil, and combine.
  5. Spread squash evenly onto a lined baking dish.
  6. Cook for 20 minutes, turning about half way through.
  7. Serve straight away.


NOTES:
* Nutritional yeast is a vegan food product with a savory, umami flavour. It is quiet often used as a parmesan cheese replacement. It is available both fortified and unfortified. The fortified version is packed with synthetic vitamins, so best to source non-GMO and unfortified nutritional yeast when you can.
