Roasted Button Squash

For nutritional purposes, it’s important to add a wide variety of fruits and vegetables into your diet. One way I like to do this is by roasting, and the button squash is no exception!!
INGREDIENTS:
- 1/2 kg button squash
- 1-2 tablespoon of nutritional yeast*
- salt and pepper (optional)
- extra virgin olive oil


METHOD:
- Preheat oven to 200Β°C (fanforced)
- Cut button squash into bite sized pieces, place into small bowl.
- Sprinkle with nutritional yeast and salt and pepper (if using).
- Drizzle with olive oil, and combine.
- Spread squash evenly onto a lined baking dish.
- Cook for 20 minutes, turning about half way through.
- Serve straight away.
NOTES:
* Nutritional yeast is a vegan food product with a savory, umami flavour. It is quiet often used as a parmesan cheese replacement. It is available both fortified and unfortified. The fortified version is packed with synthetic vitamins, so best to source non-GMO and unfortified nutritional yeast when you can.
