Roasted Beetroot



Simple roasted in-season beetroot.

INGREDIENTS:

  • 3-4 large Beetroots
  • 2 tspn dried Mixed Herbs
  • 1 tspn fine Himalayan Salt
  • Extra Virgin Olive Oil (or oil of choice)
  • Cracked Pepper (to taste)


METHOD:

  1. Preheat oven to 200 degrees
  2. Peel and dice beetroot (1.5-2cm squares)
  3. Drizzle with oil and season with mixed herbs, salt and pepper
  4. Place in oven and cook for 40 mins, turning half way through.
  5. Remove from oven and serve as a side or allow to cool and add to salads.
