Honey & Lemon Drops
Gluten, Grain, Dairy, Nut, Egg and Refined Sugar Free
Sore throats, coughs and sniffles. Cough drops just make everything seem better. Honey has antibacterial and antimicrobial properties. While lemons are high in vitamin C that can lessen the length of the cold. Having honey and lemon together can ease a sore throat, and honey on its own is an effective cough suppressant. But really, they are just so damn good, even if you’re not unwell.
INGREDIENTS:
- 1/2 cup (170g) raw honey
- 1 tablespoon unrefined coconut oil
- 2 tablespoons fresh lemon juice
- 1/3 teaspoon ground cinnamon
- arrowroot flour (for coating)
METHOD:
- Place honey, coconut oil, lemon juice and cinnamon in a small saucepan.
- Using a wooden or silicon spoon/spatula (metal will over heat), stir together on medium heat until mixture starts to simmer.
- Lower heat to medium-low and continue to stir for until the mixture foams and becomes dark golden in colour.
- The mixture may start to over bubble and foam, just take it off the stovetop until it eases and then return to heat. You will know the mixture is ready by dropping a little into a small bowl with cool water. If it hardens, it’s ready to go, if not you’ll need a little more time.*
- Once the mixture is done, remove from the heat for a couple of minutes then place mixture into small chocolate/candy moulds, or spoon coin sized drops onto a silicon mat or baking paper and allow to set.
- Once cool, remove from moulds and cover with arrowroot flour then place into an airtight container into the freezer and use as needed.
NOTES:
* If the mixture isn’t quite hard, it will be more like a chew toffee than a hard one. Good either way though.
