Vegan Mint Dip



Nothing says fresh like mint. Mint would have to be my favourite herb.

This vegan mint dip is a great condiment to add to cooked lamb, salads or roast vegetables. Or use it to go on a platter as a dip with salad sticks or crackers.


INGREDIENTS:

1 cup coconut yoghurt (see notes)

1/2 cup fresh mint

1/4 small clove garlic

juice 1/2 lime

himalayan salt (to taste)

freshly cracked pepper (to taste)

METHOD:

  1. Add all ingredients into a blender and blend until well combined.
  2. Taste the dip and add some more lime juice, salt or pepper if needed.
  3. Store in a jar in the fridge and use as needed.

NOTES:
I make my own coconut yoghurt from scratch using this starter, as most commercial brands of coconut yoghurt contain starches, gums and other additives.
