Vegan Fudgy White Chocolate




This fudgy white chocolate recipe is amazing!! Not only is it vegan, but is free from any refined sugars. You can have this made and setting in the freezer in just a few minutes. Before pouring into the moulds I added frozen raspberries and cacao nibs to mix up the flavour a little, but it really wasn’t needed.




INGREDIENTS:

  • 60g raw cacao butter
  • 2 tablespoons coconut oil
  • 2 tablespoons hulled tahini* (see notes)
  • 2 tablespoons honey** (see notes)
  • 1 teaspoon vanilla
  • pinch of salt



METHOD:

  1. Prepare silicon trays/moulds.
  2. Place cacao butter and coconut oil in a small saucepan, on low heat on the stove.
  3. Stir until melted (this will be a thin yellow liquid once done).
  4. Add remaining ingredients and mix until melted through and well combined.
  5. Allow to cool for a few minutes and then pour into silicon trays.
  6. Place in the freezer for 10 minutes until set.
  7. Remove from freezer and store in an airtight container in the fridge.




NOTES:
* If you can substitute the tahini for coconut butter or any smooth nut butter if you can tolerate them.
** Honey can be swapped for maple syrup or another liquid sweetener.
