Vegan Coleslaw




This is a perfect substitute for a traditional coleslaw, minus the egg.


INGREDIENTS:

  • ΒΌ cabbage finely sliced
  • 1 x large carrot (julienne cut)

    DRESSING:
  • ΒΌ cup (65g) coconut yoghurt
  • Β½ large avocado
  • 1 teaspoon french mustard*
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon himalayan salt

METHOD:

  1. In a medium sized salad bowl, place cabbage and carrots
  2. Mix all dressing ingredients in a small bowl
  3. Combine dressing in with the vegetable and enjoy






NOTES:

* Dijon mustard can be used in place of the French mustard.
