Vegan Banana Bake Slice
Gluten, Dairy, Egg, Nut and Refined Sugar Free – Vegan Friendly
INGREDIENTS:
- 230g gluten free flour (2 cups)
- 65g coconut sugar (⅓ cup)
- 2 teaspoon baking powder (aluminum free)
- 1 ½ teaspoons cinnamon powder
- ½ teaspoon salt
- 75g extra virgin olive oil (⅓ cup)
- 1 teaspoon vanilla
- 1 ½ cup mashed ripe bananas (approx 3 large bananas)
- 3 tablespoons coconut milk*
METHOD:
- Preheat oven to 180° degrees.
- Place all dry ingredients into a large bowl and mix together.
- Place all wet ingredients (excluding coconut milk) into a bowl and mix together.
- Combine wet ingredients to dry ingredients and stir.
- Add in a tablespoon of coconut milk at a time if mixture appears too dry.
- Pour mixture into lined baking tray (approx 20cm x 20cm).
- Cook for approx 30 minutes, until golden brown and cooked through.
- Remove from oven and allow to cool before removing from the tray and cutting into required portion sizes.
NOTES:
* Make sure to use full-fat coconut milk IF NEEDED.
** Tip: It makes it easier to cut the slice by placing it in the fridge for 30 minutes beforehand.
*** This can be stored in the freezer in portion sizes and taken out and defrosted before eating.
