Taco Bowls

Gluten, Egg, Nut, Dairy, Refined Sugar Free – Grain Free Opt – GAPS/Paleo

Who doesn’t love a healthy, nutritious, easy child-friendly weekday meal!! Using the meat as the base, add any salad ingredients to the bowl that you have in the fridge. This is such a quick and easy to make meal and best of all can be adjusted to suit almost any dietary requirements.

INGREDIENTS:

MINCE INGREDIENTS:

  • 500g Beef Mince (no additives added – look for straight meat)
  • 1 Clove Garlic finely diced
  • 2 Tbl Coconut Oil
  • 1x grated Zucchini
  • 1 1/2 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1tsp Oregano Flakes (opt)
  • 1tsp Ground Paprika (opt)
  • 1/2 cup bone broth/stock or filtered water

SALAD INGREDIENTS:

  • 1/2 Iceberg Lettuce shredded
  • 2 x Tomatoes diced
  • 1 1/2 x Cucumbers sliced
  • 1 1/2 x Carrots grated
  • 1/2 cup Corn Kernels (omit for grain-free)
  • 2 large handfuls organic Corn Chips (omit for grain-free)
  • 1 x Avocado chopped

METHOD:

  1. Brown mince and garlic with coconut oil
  2. Add all other ingredients
  3. Allow to simmer for 15 mins. (I like to let it simmer for as long as i can to let the flavours really come out. Add some more bone broth if needed)
  4. While the mince in simmering, prepare salad and place into a serving sized bowls.
  5. Add mince and serve while still warm.

NOTES: Add or replace any salads or condiments or dairy to serve with the mince, that you are able to consume – the combinations are endless!!
