Spicy Fish and Fried 'Rice'




This spicy fish and fried ‘rice’ is my daughters new favourite meal! The fish can be easily substituted with chicken or tofu, or simply omitted. The fried ‘rice’ by itself is a delicious side or vegan option. It’s a fast easy meal that you can have on the table in 20 minutes. If you’re eating a grain-free diet, this is one to try.





INGREDIENTS:


FISH INGREDIENTS

  • 500g firm fish (I used a local snapper)
  • 2 ½ teaspoons garam marsala
  • ¾ teaspoon ground turmeric
  • ⅓ teaspoon ground pepper
  • ⅛ teaspoon chilli powder (optional)
  • 80ml extra virgin olive oil
  • 2 tablespoons fresh lime juice

FRIED RICE INGREDIENTS

  • 600g cauliflower rice (see notes)
  • 3 tablespoons oil
  • 2 x carrots sliced
  • 2 cups broccoli florets
  • 1 x finely sliced leek (white part only)
  • 1 x clove garlic diced
  • 2 x tablespoons diced ginger
  • 2 x teaspoons garam marsala
  • 1 x teaspoon ground turmeric
  • 1 x handful fresh coriander/parsley to serve


METHOD:

FISH METHOD:

  1. Mix all spices, oil and lime in a bowl.
  2. Add fish and cover, allow to marinade for 15 minutes.
  3. Preheat oven to 180°C.
  4. Transfer fish to a baking pan and cover, cooking for 15-20 minutes until flakey.
  5. If you had larger fish fillets, break into smaller portions.



FRIED RICE METHOD:

  1. While the fish is cooking, in a large frypan on medium-high heat, add 1 tablespoon oil, carrot and broccoli and cook until soft. Transfer to a bowl and set aside.
  2. Add another tablespoon oil, leek, garlic and ginger and cook together for for 3 minutes.
  3. Place cauliflower rice garam masala and ground turmeric in the pan and mix together cooking for another 3 minutes.
  4. Combine the broccoli and and cauliflower in the pan with the rice mixture.
  5. Serve in a large bowl.
  6. Add the cooked fish on top and serve with coriander or parsley.



NOTES:
* Cauliflower rice is readily available at the supermarket. You can simply make your own by using a blender and pulse until it becomes rice sized portions. To make in the thermomix place 300g into the bowl for 3 seconds on speed 5. It can also be made by chopping the florets using a large knife.
