Soft & Chewy Energy Bites
Gluten, Dairy, Egg, Nut and Refined Sugar Free

Use wholefood ingredients to make this soft and chewy energy bar for a snack or as a dessert with whipped coconut cream and fresh berries.
INGREDIENTS:
- 125g (1cup) rice flakes
- 40g (¼ cup) rice flour
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground clove
- 30g (2 tablespoons) coconut sugar
- 40g (¼ cup) raisins
- 95g (¾ cup) sunflower seeds ** (see notes)
- 100g grated chocolate (at least 75% cacao)
- 160g (½ cup) fruit juice * (see notes)
- 60g (¼ cup) maple syrup *** (see notes)
- 40g (¼ cup) extra virgin coconut oil
- 1 teaspoon vanilla
- pinch of salt
METHOD:
- Preheat oven to 170°C fan forced.
- Mix all dry ingredients together in a large mixing bowl.
- In a small saucepan add all wet ingredients bringing to the boil and simmer until liquid reduces by about 1/4.
- Allow to cool slightly and mix in with dry ingredients.
- Empty mixture into a lined baking or bread tin (approx 20cmx8cm), pressing mixture down firmly.
- Cook for 25 minutes.
- Allow to cool, before cutting into pieces.
- Store in an airtight container in the fridge or freezer.
NOTES:
* Use 100% fruit juice. Apple works well, but any kind will do.
** The sunflower seeds can be replaced with pepitas (pumpkin seeds) or nuts if you can tolerate them.
*** Maple syrup can be replaced with honey if the recipe doesn’t have to be vegan.
