Slow-Cooker Mexican Soup
Gluten, Dairy, Egg, Nut and Refined Sugar Free
INGREDIENTS:
- 500g Free-Range Chicken Breast diced
- 2 cloves Garlic crushed
- 1 Brown Onion diced
- 1/4 Capsicum diced
- 1 can diced Tomatoes
- 2 cups of Vegetable Stock
- 1 Tbspn Ground Cumin
- 1 tsp Dried Oregano
- 1 tsp Ground Coriander
- 1/2 tsp Paprika
- 1/4 tsp Chilli Powder
- Himalayan Salt and Ground Pepper
- 300g cooked Rice/cauliflower rice
- Β Freshly made Guacamole
METHOD:
- Place all ingredients except rice and guacamole Β into a slow cooker and place temperature on low setting for 8 – 10 hours
- Serve rice, soup and guacamole into a bowl and enjoy.
