Slow Cooker Mexican Soup

INGREDIENTS:

  • 500g Free-Range Chicken Breast diced
  • 2 cloves Garlic crushed
  • 1 Brown Onion diced
  • 1/4 Capsicum diced
  • 1 can diced Tomatoes
  • 2 cups of Vegetable Stock
  • 1 Tbspn Ground Cumin
  • 1 tsp Dried Oregano
  • 1 tsp Ground Coriander
  • 1/2 tsp Paprika
  • 1/4 tsp Chilli Powder
  • Himalayan Salt and Ground Pepper
  • 300g cooked Rice/cauliflower rice
  • Β Freshly made Guacamole

METHOD:

  1. Place all ingredients except rice and guacamole Β into a slow cooker and place temperature on low setting for 8 – 10 hours
  2. Serve rice, soup and guacamole into a bowl and enjoy.
