Slow-Cooked Massaman Curry with Beef and Potato

Gluten, Dairy, Egg and Nut Free

Massaman Beef Curry

INGREDIENTS:

  • 2 Tbl Extra Virgin Olive Oil
  • 650g diced Beef
  • 5 Tbl Massaman Curry PasteΒ (link for my recipe here)
  • 1 Cup Stock or bone broth
  • 2 Cinnamon Sticks
  • 2 Bay Leaves
  • 2 Tsp Ground Cardamon
  • 2 Tbl Rapadura Sugar
  • 1 Tbl Fresh Lime Juice
  • 1 1/2 Tbl Fish Sauce
  • 3 medium Potatoes peeled and cut into 2 1/2cm squares
  • 2 x can Coconut Cream (270ml)
  • Cooked rice or cauliflower rice to serve

METHOD:

  1. Place all ingredients (except potatoes, coconut milk and cream) into a slow cooker for approx. 6-8 hrs.
  2. About 1 1/2 hours before serving place potatoes in to cook
  3. 1 hour before serving place coconut milk and cream into slow cooker to heat.
  4. Remove cinnamon sticks and bay leaves before serving onΒ cooked rice
