Slow-Cooked Massaman Curry with Beef and Potato
Gluten, Dairy, Egg and Nut Free
INGREDIENTS:
- 2 Tbl Extra Virgin Olive Oil
- 650g diced Beef
- 5 Tbl Massaman Curry PasteΒ (link for my recipe here)
- 1 Cup Stock or bone broth
- 2 Cinnamon Sticks
- 2 Bay Leaves
- 2 Tsp Ground Cardamon
- 2 Tbl Rapadura Sugar
- 1 Tbl Fresh Lime Juice
- 1 1/2 Tbl Fish Sauce
- 3 medium Potatoes peeled and cut into 2 1/2cm squares
- 2 x can Coconut Cream (270ml)
- Cooked rice or cauliflower rice to serve
METHOD:
- Place all ingredients (except potatoes, coconut milk and cream) into a slow cooker for approx. 6-8 hrs.
- About 1 1/2 hours before serving place potatoes in to cook
- 1 hour before serving place coconut milk and cream into slow cooker to heat.
- Remove cinnamon sticks and bay leaves before serving onΒ cooked rice
