Meat Pies
Gluten, Grain, Dairy, Egg and Nut Free
Makes 4-6 large single serve pies
I’m not one to go and buy a meat pie, but I will make my own, knowing that they are full of wholesome ingredients that are going to nourish my body.
Here is a recipe for my meat pie filling. For the pastry, I like to use the same recipe as I do for these sausage rolls, but any pastry can be used.
INGREDIENTS:
- 500g Beef Mince mince nothing else added!)
- 2 Tblspn of Coconut Oil (or oil of choice)
- 1/2 Leek (finely sliced – white part only)
- 1 x clove Garlic (finely diced)
- 2 x sticks Celery (diced)
- 2 x Carrots (grated)
- 1 x Zucchini (grated)
- 1/4 cup Coconut Aminos (*see notes)
- 1/2 cup Meat Stock/BoneBroth
- 1-2 tsp Himalayan Salt
- 2 tsp Ground Cumin
- 2 tsp Ground Tumeric
METHOD:
- Place mince and garlic into a fry pan and cook until brown.
- Add all other ingredients and allow to simmer for 20 minutes, add more stock if needed.
- Divide mince mixture equally into ramekins and top with prepared pastry.
- Dependant on the pastry you are using, cook in a medium oven for 25 minutes, or until pastry is brown.
- Serve with salad or roasted vegetables.
NOTES:
* Tamari can be substituted for the coconut aminos.
* Mince mixture can be cooked up in advance and frozen to be used for an easier dinner.
