Little Potato Base Pizzas

Healthy little tasty snacks…..



INGREDIENTS:


  • 4 x large Potatoes
  • 1 Tblspn Extra Virgin Olive Oil (or good quality oil of choice)
  • 3/4 cup Pizza Sauce (I use this recipe to make my own)
  • Toppings of your choice
    • nitrate free ham
    • tomato
    • pineapple
    • capsicum
    • cheese (see notes)
    • avocado/guacamole
    • sunflower seed cheese recipe


Little Potato Base Pizza




METHOD:

  1. Preheat oven to 200 degrees
  2. Clean potatoes and cut into 0.75cm slices.
  3. Rub small amount of oil on slices and place in lined baking tray.
  4. Cook for 50 minutes, turning half way through.
  5. Spread pizza sauce evenly on cooked bases and add pizza toppings.
  6. Bake another 15 minutes.
  7. Serve hot or cold with a salad.




NOTES:
* We are dairy free, so I like to put guacamole or sunflower seed cheese on top to give it some creaminess once the pizzas are cooked.
