Lime Panna Cotta Jars

Panna Cotta is an easy and delicious dessert or snack to make. We are dairy free so I like to make ours with coconut cream, but any kind of milk can be used. It contains gelatin, which is a great source of protein to add to your diet, and also makes it silky smooth and creamy with a jelly like consistency.
INGREDIENTS:
- 270ml coconut cream
- 250ml filtered water
- 3 teaspoons good quality gelatin * (see notes)
- zest and juice of 1 x lime
- 2 tablespoons raw honey
- 2 x handfuls of blueberries
- 2 x large fresh passionfruit
- pinch salt
METHOD:
- Place gelatin and water in a glass and allow to bloom for a few minutes. (This allows the gelatin to soften before using, creating a smoother finish.)
- Divide blueberries evenly between jars or ramekins.
- Place the coconut cream, gelatin, honey and lime into a saucepan on medium-low heat and stir together until gelatin is completely dissolved.
- Remove from heat, pour into jars and place into the fridge to set.
- Add passionfruit just before serving.
