Homemade Honeycomb




This is definitely not a healthy recipe, but it is allergy friendly.

We were after something sweet and fun to make and this ticked the boxes. Once the honeycomb was made, we whipped up some chocolate and poured it over the top, let it set and cut into pieces, it was just like eating a crunchie. We also had it crumbled on the top of some homemade icecream – delicious for an occasional treat.




INGREDIENTS:


  • 1/4 cup raw honey (40g)
  • 1/2 cup coconut sugar (60g)
  • 1 teaspoon of vanilla extract or powder
  • 2 teaspoons of bicarbonate of soda

METHOD:


  1. Prepare a baking tray by lining with baking paper.
  2. Place honey and sugar into a small saucepan and stir until sugar has dissolved with low heat.
  3. Slowly increase the heat until the mixture begins to slowly boil, allow to boil for about 2 minutes.
  4. Remove from stove and add the vanilla and bicarbonate of soda, whisking for 30 seconds. It will bubble and foam.
  5. Pour into prepare baking tray.
  6. Refrigerate for 1-2 hours until set. Break into pieces, storing in an airtight container.
