Grain-Free Fish Bites
Gluten, Dairy, Grain, Egg and Nut Free
Yumm… Fish Bites.. It’s one of those foods that kids love, but store bought frozen ones normally have vegetable or canola oils as an ingredient, and for us, finding them without gluten or eggs as well is a challenge. So the easiest way to avoid them is to just to make our own.
I buy my fish direct from a fishmonger at the local markets. As far as your health goes, purchasing your fish from somewhere you trust is important. This recipe works best when using firm white fish, such as Mahi Mahi, Snapper, Coral Trout or Cod. When cooked they hold together well, which is what we need to happen.
Even though this is a kids favourite, adults love them too!
INGREDIENTS:
- 1/2 cup extra virgin olive oil (for coating)
- 500g firm white fish
- 1 1/4 cup sunflower seed flour (120g)
- 2/3 cup tapioca (80g)
- 2/3 cup desiccated coconut (55g)
- 1 1/2 teaspoons ground paprika
- 1 teaspoon dried mixed herbs
- 1 1/2 teaspoons garlic powder
- 1 teaspoon fine Himalayan salt
- Additional extra virgin olive oil for cooking
METHOD:
- Preheat oven to 190 degrees.
- Combine all dry ingredients in a shallow dish.
- Place the oil for coating into a small bowl.
- Cut fish into bit sized pieces (about 4cm squared).
- Dip a piece of fish in the coating oil.
- Transfer to the flour dish and generously coat.
- Place onto prepared baking tray and continue steps 5 and 6 until all fish have been coated.
- Drizzle fish pieces with a little bit of olive oil to help brown.
- Cook for 7 minutes, then turn the fish bites over, returning to the oven for another 7 minutes (or until brown and cooked through)
- Serve with salad or as a finger food with sweet chilli sauce or mayonnaise.
