Easy Tzatziki

Condiments and sauces make EVERYTHING tastes better and tzatziki is no exception.
It is found in the dishes of Southeast Europe and the Middle East and is made of saltedΒ strained yoghurt mixed with cucumbers, garlic, salt, olive oil, lemon juice and herbs. Tzatziki is eaten with pitas, roasted vegetables, salads, sandwiches and more.
Not only does it delicious and creamy, made with a good quality yoghurt it’s a perfect way to add in some fermented food to your diet.
INGREDIENTS:
- 1 cup plain yoghurt of choice (I use coconut yoghurt* – see notes)
- 1/2 cup grated cucumber (with excess liquid squeezed out)
- 1 tablespoon lime juice
- 1 x garlic clove diced
- 1/2 teaspoon himalayan salt
- 2 tablespoons fresh mint finely chopped
METHOD:
- Mix all ingredients into a small bowl.
- Transfer to a glass container and store until needed.
NOTES:
* I use my own homemade coconut yoghurt as we are dairy free. It’s easy to make your own, I use a coconut starter from here.
** Tzatziki will cup up to 5 days in the fridge.
