Coconut Lamb Curry

INGREDIENTS:

  • 1.5kg of Lamb Shoulder
  • 2 brown onions diced
  • 3 cloves garlic minced
  • 1 1/2 Tbl of Paprika
  • 1/2 cup water
  • 1/4 tsp of chilli powder (or to taste)
  • 1Β Tbl curry powder
  • 1 Tbl tumeric
  • 3/4 cup tomato paste
  • 1 x can coconut cream
  • cooked rice or cauliflower rice to serve

METHOD

  1. Cook lamb in oven or slower cooker with onion, garlic, water and paprika
  2. Shred lamb once cooked
  3. Place juices and onion from lamb into a saucepan and add curry powder, chilli powder, turmeric and cook
  4. Add lamb and tomato paste and cook for a few minutes.
  5. Empty coconut cream into saucepan and simmer for 10 minutes
  6. Serve with cooked rice
