Coconut Lamb Curry
Gluten, Dairy, Egg and Nut Free
INGREDIENTS:
- 1.5kg of Lamb Shoulder
- 2 brown onions diced
- 3 cloves garlic minced
- 1 1/2 Tbl of Paprika
- 1/2 cup water
- 1/4 tsp of chilli powder (or to taste)
- 1Β Tbl curry powder
- 1 Tbl tumeric
- 3/4 cup tomato paste
- 1 x can coconut cream
- cooked rice or cauliflower rice to serve
METHOD
- Cook lamb in oven or slower cooker with onion, garlic, water and paprika
- Shred lamb once cooked
- Place juices and onion from lamb into a saucepan and add curry powder, chilli powder, turmeric and cook
- Add lamb and tomato paste and cook for a few minutes.
- Empty coconut cream into saucepan and simmer for 10 minutes
- Serve with cooked rice
