Choc Chip Cookie Dough Bites

Easter may be over, but that doesn’t mean that chocolate has to be!
These choc chip cookie dough bites, not only give you that chocolate fix but are healthy too.
They are nut free so add them to your lunchbox.
This recipe makes 12, but you may want to double it and store them in the freezer!
INGREDIENTS:
- 1 cup (140g) sunflower seeds activated or raw *(see notes)
- 2 tablespoons cacao powder
- 3 tablespoons coconut flour
- 1-2 tablespoon coconut oil
- 1 tablespoon raw honey
- 1 teaspoon vanilla extract
- pinch of salt
- 1/4 cup cacao nibs or dairy free chocolate chips
METHOD:
- Place seeds into a blender or thermomix until a flour consistency (thermomix 9 seconds speed 9)
- Add in cacao powder, coconut flour, coconut oil, honey, vanilla, salt and combine. The mixture may look a little dry but should ‘ball’ together. If you find that it still doesn’t, add another tablespoon of coconut oil. (This is dependent on how much moisture is in the seeds).
- Add in the cacao nibs or chocolate chips and combine.
- Roll into golf ball sized balls and store in the fridge or freezer.
NOTES:
* I activate seeds for easier digestion, but raw seeds will work just as well.
If you are able to tolerate nuts, they can be easily substituted in this recipe.
