Chicken and Mushroom Alfredo Zoodles

Gluten, Grain, Dairy, Egg and Nut Free

Chicken and Mushroom Alfredo Zoodles

INGREDIENTS:

  • 2-3 large Zucchini (spiralized)
  • 1 clove Garlic (finely chopped)
  • 350gΒ  Mushrooms (finely sliced)
  • 270ml full-fat Coconut Cream
  • 2 x rashes of Nitrate Free Bacon
  • 3/4 Tbl Nutritional Yeast (Savoury Yeast)
  • 1 x Chicken Breast (diced) (see notes)
  • Himilayan Salt and Cracked Pepper to taste
  • Extra Virgin Olive Oil for pan

METHOD

  1. Place oil, chicken, garlic and bacon into large frypan or wok and cook until chicken is cooked through
  2. Add mushrooms, coconut cream, nutritional yeast, salt and pepper and allow to simmer for 5 minutes
  3. finally addΒ  zoodles for 2 minutes
  4. This is best served freshly cooked

NOTES:

This would taste great also without the chicken!!
