Zucchini Fritters
Gluten, Grain, Dairy, Nut, Egg and Refined Sugar Free – Vegan Friendly
These zucchini fritters are a great way of adding more vegetables (and less refined breads) into your diet. They can be eaten hot or cold. Add some cook meats or salads to eat as a main meal or to have as a snack, eat on their own or with some sweet chilli or guacamole.
INGREDIENTS:
- 4 cups grated zucchini (squeezed to remove excess liquid)
- 100g tapioca/arrowroot flour
- Β½ leek diced
- 1Β½ teaspoon dried oregano
- 2 tablespoons nutritional yeast
- 3 tablespoons tahini *see notes
- 1Β½ teaspoon himalayan salt
- ground pepper to taste
- 2 tablespoons extra virgin olive oil for frying
METHOD:
- Place grated zucchini into a large bowl, making sure to squeeze out any excess liquid first.
- Mix remaining ingredients in with the zucchini.
- Heat a large frypan to medium-high with oil.
- Flatten a large, heaped tablespoonful of mixture into frypan and cook for about 5 minutes on each side until golden brown.
- Keep covered until ready to serve.
NOTES:
* The tahini can be replaced with any nut butters, or simply omit if sesame seeds are a concern.
