Zoodles with Chicken and Cauliflower Alfredo Sauce

I made this for the first time this week – and I loved it!!  I’ve had a spiraliser for two years now and have really not used it enough and this is something I have been wanting to make for a while now.  I don’t have issues with my kids trying any foods, but even the fussiest of eaters would not be able to taste cauliflower anywhere in this!!  Such a versatile recipe, is Paleo and can be easily adapted to be vegan!!

The Zoodle maker I have is the Chef Avenue 3 in 1 slicer.  I find it great and really worth it.  I had bought a cheap hand held spiral cutter and it was terrible.  It broke very quickly and wasted a lot of the vegetable that I was cutting with it.  Please do your own searching and find what is going to work for you.

Zoodles with Chicken and Cauliflower Alfredo Sauce

INGREDIENTS:

Zoodles:

  • 70g Nitrate Free Bacon or Ham (thinly cut)
  • 1 x Chicken Breast (diced)
  • 4 large Zucchini (cut into large spirals)
  • Oil of choice for cooking

Cauliflower Alfredo Sauce:

  • 4-5 cloves Garlic
  • 30g Extra Virgin Olive Oil
  • 400ml Vegetable Stock (homemade is best – or use bone broth is you have it)
  • 2 heaped Tablespoons Nutritional Yeast (see Notes:)
  • 450g Cauliflower florets (about 1/2 a head of Cauliflower)
  • Salt and Pepper to taste

METHOD:

Cauliflower Alfredo Sauce (Thermomix):

  1. Add Garlic to thermomix bowl 5 sec/speed 5
  2. Scrap down sides and add oil  2 mins/100/speed 1
  3. Add yeast, cauliflower, stock, salt and pepper and cook 20 mins/100/speed 3
  4. Checking the cauliflower is really soft before blending on speed 9/1 minute

Cauliflower Alfredo Sauce (Conventional)

  1. In a medium sized pot add garlic and oil and allow to sweet for a couple of minutes on medium heat.
  2. Add all other ingredients and allow to cook for approximately 15-20 minutes until cauliflower is soft.
  3. Use a hand blender (or transfer to blender or food processor) and blend until it’s a soup consistency

Zoodles:

  1. Preheat a large saucepan on medium-high heat.
  2. Add oil, chicken and bacon and allow to brown
  3. Place zoodles into the frypan and stir for approximately 3 minutes allowing to soften.
  4. Add sauce, stir through and serve while warm.

 

NOTES:  Nutritional Yeast is also known as Savoury Yeast.  It is very high in protein and tastes a lot of parmesan cheese when added.
