Gluten, Dairy, Egg, Refined Sugar and Nut Free
Serves 4 as a meal

This is a refreshing salad to enjoy with the warmer whether coming along.
Who says salads are all lettuce leaves and tomatoes?!
INGREDIENTS:
- 3 cups seedless watermelon (cut in 1.5cm pieces)
- 1 cup strawberries (quartered)
- 1 lebanese cucumbers (quartered lengthways and then 1.5cm pieces)
- 1 large handful baby spinach leaves
- 1 small handful mint leaves torn into pieces
- Juice x1 lime
- Salt and pepper to taste
- 1 x tbl raw honey (optional – see notes)

METHOD:
- Place all ingredients except baby spinach leaves into a bowl and gently combine.
- On a plate or in a bowl evenly divide spinach leaves
- Top with mixed watermelon and strawberries.
- Enjoy on it’s own or with your favourite cut of cooked meat.
NOTES:
Although this salad will keep, it is best eaten just after preparing.
I find this recipe sweet enough without the added honey, if you have a real sweet tooth though you may like the honey added.
