Warm Apple and Saltana Wraps

Makes Approximately 20

I made these for breakfast for us over the weekend and they were delicious – so simple and easy to make!!  They had an apple turnovers taste but you weren’t left feeling bloated and heavy after!!

  • 3 large Apples
  • 2 T fresh Lemon Juice
  • 4 T Rapadura
  • a handful of Sultanas (natural and organic please!!)
  • 20 Rice Paper Wrappers
  • Coconut Oil (for brushing)
  • extra Rapadura for dusting
  1. Preheat oven to 200 degrees
  2. Place lemon juice into a small bowl with water
  3. Peel and slice apples into 1/3 cm thick wedges, placing wedges into bowl of lemon water to stop browning of apples for about 5 minutes
  4. Meanwhile, prepare rice paper wrappers ready for use (as per the instructions on the packet)
  5. Empty water from apple bowl and add rapadura and mix in well
  6. Place about 3 pieces of apple and about 5 sultanas into the wrap and roll together into a wrap (the packets give great directions on how to wrap – it doesn’t take long to get the hang of it!!)
  7. Place the wraps onto a prepared oven tray
  8. Brush them with (melted) oil and sprinkle with the extra rapadura
  9. Cook in oven for about 15-20 minutes or until golden brown and crispy

These were eaten warm straight from the oven, although we had a couple left over and they were really nice cold as well.  Great for a morning meal, for dessert or for the kids in the lunchbox!!

Notes;

  • I used red apples because that is what I had in the fridge, any kind would work though
  • The rice paper wrappers can be purchased from supermarkets – make sure to read the ingredients as not all brands are gluten free, if you are avoiding gluten
  • I have used rapadura as that’s our preference for sugar, but any kind of sugar would work
  • Use oil of choice if you don’t have coconut oil
