Sweet Potato Falafel




Falafel is a popular vegan Middle Eastern “fast food” made with chickpeas, fresh herbs, and spices that are formed into a small patties or balls.  They are often eaten in pita bread drizzled with tahini sauce.



INGREDIENTS:


  • 400g sweet potato
  • 1 clove garlic (diced)
  • 1 x handful fresh coriander (diced)
  • 1 x 400g can of chickpeas (drained)
  • 3 teaspoons turmeric powder
  • 1 teaspoon cardamom powder
  • 2 teaspoons cumin powder
  • 1 1/2 teaspoons Himalayan salt
  • 30g tapioca powder



Sweet Potato Falafel




THERMOMIX METHOD:

  1. Preheat oven to 200 degrees.
  2. In chunks, place raw sweet potato into thermomix bowl 4 seconds speed 7.
  3. Cook for 4 min/100/spd 1-2.
  4. Add remaining ingredients and blend on speed 7 for 1 minute.
  5. Using a soup spoon, place equal amounts of mixture onto a lined baking tray.
  6. Cook for 30 minutes, until starting to brown.
  7. Allow to cool for 10-15 minutes before eating.



CONVENTIONAL METHOD:

  1. Preheat oven to 200 degrees.
  2. In chunks, place raw sweet potato into a pot of boiling water and allow to cook on medium heat until tender approximately 20-30 minutes.
  3. Add all ingredients into a blender and blend until smooth.
  4. Using a soup spoon, place equal amounts of mixture onto a lined baking tray.
  5. Cook for 30 minutes, until starting to brown.
  6. Allow to cool for 10-15 minutes before eating.


NOTES:
* Falafel can be frozen until needed and eaten both hot and cold.
** We will add falafel as side to salads but they are often eaten with rice, kimchi (fermented vegetables), tzatziki, baba ghanoush, tabouli and dips such as guacamole, tahini sauce or hummus. Fantastic to add to the lunch box.
