Sun-dried Tomato Hummus
Traditionally, hummus is made from chickpeas (or garbanzo beans). I’m a huge dip fan, but have never really liked the consistency of chickpeas so have always used cannelloni instead. With my son being highly allergic to dairy, and my daughter intolerant, hummus is a great option. I often try different flavours, and this sun-dried tomato one was great! When I’m organised I’ll use my own organic sun-dried tomatoes or otherwise I’ll use the woolworths ones (they’re not organic, but they don’t contain any additives or preservatives). My kids have it in their lunchboxes with veggie sticks or crackers, or it’s yum spread onto some rice cakes with your favourite toppings..
- 2 cloves of garlic
- juice of 1 lime
- 1 can cannelloni beans (drained and rinsed)
- 100g semi-sundried tomatoes
- Himalyan Salt and Pepper to taste
- Place garlic in blender to mince
- Add all other ingredients and blend until preferred consistency, for me it is about 1 minute.
