Gluten, Dairy, Refined Sugar, Egg and Nut Free

Strawberry Jam

If you have a spare 35 minutes and one kilo of strawberries, then you have time to make 3 jars of your own jam.  It’s so simple!!

  • 1kg Strawberries (hulled)
  • 280g Rapadura/Coconut Sugar
  • 2 T Natural Vanilla Extract
  1. Place all ingredients into the thermomix bowl for 15 minutes, Varoma, Speed 2
  2. Scrap down sides and cook a further 15 minutes, 100 degrees, Speed 2
  3. Check thickness at this stage, not forgetting that it will thicken once it has been placed in the fridge, and you may need to cook the mixture an extra 5 minutes at the same temperature if you like your jam really thick.
  4. Blend Speed 5, 30 seconds
  5. Place in sterilized jars and keep in the fridge.

And you’re done, it is as easy at that!!  If you don’t have a thermomix, this recipe will work on a stove top with the same quantities, making sure that you stir the pot regularly to avoid sticking, use a hand blender to make the sauce smooth after cooking.
