Seedie Muesli Bars

Nut Free, Gluten Free, Dairy Free and Refined Sugar Free

We are a nut free household and I find these bars are a great, healthy alternative.  They are a great snack for when you’re on the go or for the school lunchbox and take 5 minutes to prepare for the oven!

  • 150g Pumpkin Seeds (pepitas)
  • 50g Sunflower seeds
  • 50g pitted dates
  • 50g sultanas
  • 50g dried cranberries
  • 50g goji berries
  • 30g coconut sugar
  • 60g coconut oil

Thermomix

  1. Preheat oven to 150 degrees.  Line a backing tray with baking paper and put aside.(mine is 30cmx15cm)
  2. Put pumpkin seeds, sunflower seeds and dates into bowl and chop 10 seconds speed 7.
  3. Add dried fruit and chop 5 seconds speed 7.
  4. Place all remaining in bowl 20 seconds speed 4 on reverse.
  5. Pour into prepared baking dish, press down to flatten and bake in the oven for 40 mins or until brown.  Allow to cool completely before cutting.

Blender

  1. Preheat oven to 150 degrees.  Line a 20cm square backing dish with baking paper and put aside.
  2. Put pumpkin seeds, sunflower seeds and dates into blender and chop until pieces are about the size of uncooked rice.
  3. Add dried fruit and blend until combined.
  4. Place all ingredients (including those in the blender) in a large bowl and mix until well combined.
  5. Pour into prepared baking dish,  press down to flatten and bake in the oven for 30 – 40 mins or until brown.  Allow to cool completely before cutting.
