Seedie Muesli Bars
Nut Free, Gluten Free, Dairy Free and Refined Sugar Free
We are a nut free household and I find these bars are a great, healthy alternative. They are a great snack for when you’re on the go or for the school lunchbox and take 5 minutes to prepare for the oven!
- 150g Pumpkin Seeds (pepitas)
- 50g Sunflower seeds
- 50g pitted dates
- 50g sultanas
- 50g dried cranberries
- 50g goji berries
- 30g coconut sugar
- 60g coconut oil
Thermomix
- Preheat oven to 150 degrees. Line a backing tray with baking paper and put aside.(mine is 30cmx15cm)
- Put pumpkin seeds, sunflower seeds and dates into bowl and chop 10 seconds speed 7.
- Add dried fruit and chop 5 seconds speed 7.
- Place all remaining in bowl 20 seconds speed 4 on reverse.
- Pour into prepared baking dish, press down to flatten and bake in the oven for 40 mins or until brown. Allow to cool completely before cutting.
Blender
- Preheat oven to 150 degrees. Line a 20cm square backing dish with baking paper and put aside.
- Put pumpkin seeds, sunflower seeds and dates into blender and chop until pieces are about the size of uncooked rice.
- Add dried fruit and blend until combined.
- Place all ingredients (including those in the blender) in a large bowl and mix until well combined.
- Pour into prepared baking dish, press down to flatten and bake in the oven for 30 – 40 mins or until brown. Allow to cool completely before cutting.
