Gluten, Dairy, Egg, Nut and Refined Sugar Free

Savoury Meat Muffin

INGREDIENTS

  • 500g Beef Mince (just meat – no nasties added)
  • 1 clove Garlic (diced)
  • 1/2 Leek (finely sliced – white part only)
  • 1 Tbls Rosemary (finely chopped)
  • 1 Tbls Dried Thyme
  • 1 x Carrot grated
  • 1/2 x Zucchini grated
  • 1 x piece Rindless Bacon (diced)
  • Salt and Pepper to taste

METHOD:

  1. Preheat oven to 180 degrees
  2. Place all ingredients into a large bowl and mix well together (using your fingers works best!)
  3. Place spoonfuls of mixture evenly into prepared muffin trays.
  4. Cook in the oven for 18 mins until cooked through.
  5. Allow to cook for a few minutes until removing from tray.

NOTES:

  • These are great eaten hot or perfect to be put into lunchboxes with a salad.
  • They can be frozen once cooked and cooled for an easy mid-week meal.
