Savoury Meat Muffins
Gluten, Dairy, Egg, Nut and Refined Sugar Free
Makes 14
INGREDIENTS
- 500g Beef Mince (just meat – no nasties added)
- 1 clove Garlic (diced)
- 1/2 Leek (finely sliced – white part only)
- 1 Tbls Rosemary (finely chopped)
- 1 Tbls Dried Thyme
- 1 x Carrot grated
- 1/2 x Zucchini grated
- 1 x piece Rindless Bacon (diced)
- Salt and Pepper to taste
METHOD:
- Preheat oven to 180 degrees
- Place all ingredients into a large bowl and mix well together (using your fingers works best!)
- Place spoonfuls of mixture evenly into prepared muffin trays.
- Cook in the oven for 18 mins until cooked through.
- Allow to cook for a few minutes until removing from tray.
NOTES:
- These are great eaten hot or perfect to be put into lunchboxes with a salad.
- They can be frozen once cooked and cooled for an easy mid-week meal.
