Savoury Cauliflower Crepes

These vegan savoury cauliflower crepes are so delicious and have a real cheesy taste. They are amazing on their own or with salads or shredded meats.
INGREDIENTS:
- 1 medium cauliflower (approx 750g florets)
- 2 tablespoons psyllium husk + β cup water
- Β½ leek finely diced
- 1 x teaspoon garlic powder
- 1 x teaspoon ground turmeric
- 1 x tablespoon nutritional yeast
- 40g tapioca flour (4 x heaped tablespoons)
- 2 x teaspoons himalayan salt
- Pepper to taste
METHOD:
- Preheat oven to 190Β°C
- Rice cauliflower by finely chopping florets until rice sized.*(see notes on other ways to rice)
- Mix psyllium husk and water together in a glass and set aside.
- Add all ingredients together into a large bowl and set aside for 10 minutes.
- Onto two large, lined baking dishes, divide mixture and flatten into desired size
- Place into oven for about 25 minutes until golden brown.
- These can be eaten hot or cold.
NOTES:
* Cauliflower can also be riced by pulsing in a food processor, or placing into a thermomix for 3 seconds on speed 5, in up to 500g lots, you may need to increase by 1-2 seconds if it’s not quite done. I like to buy cauliflower when it is cheap and in season, ricing it (is that even a word!!) and freezing it in ready to go bags.
