Rum Balls
Gluten, Grain, Dairy, Nut & Egg Free

This is definitely, something I only make once a year.. But hey, it’s Christmas….
INGREDIENTS:
- 70g Butter
- 150g Pure Icing Sugar (see notes)
- 60g Raw Cacao Powder
- 60g Desiccated Coconut
- 60g Coconut Flour
- 150g Sultanas
- 10 tablespoons Bundaberg Rum
- Additional 60g Desiccated Coconut for rolling
METHOD:
- Get your hands dirty by rubbing the butter, icing sugar, cacao powder, desiccated coconut an coconut flower into a large bowl.
- Mix in the rum and sultanas.
- Roll into golf ball sized shapes and roll in the additional desiccated coconut.
- Place in an air tight container and keep in the fridge until needed.
NOTES:
The difference between pure icing sugar and soft icing sugar mixture is that icing sugar mixture has a little cornflour added to prevent it from forming lumps if it gets moist. Cornflour is also a grain.
