No-Bake Passionfruit Slice

Gluten, Grain, Egg and Refined Sugar Free

Raw Passionfruit Slice

INGREDIENTS:

Base:

  • 50g Coconut Chips
  • 70g Coconut Flour (see notes)
  • 3 Tbl Coconut Butter
  • 2 Tbl Coconut Nectar
  • 1 Tsp Natural Vanilla

Top:

  • 7 Tbl Coconut Butter (see notes)
  • 2 Tbl Coconut Nectar
  • 1 Tbl Maple Syrup
  • 3 Tbl Extra Virgin Coconut Oil (melted)
  • Pulp of 4 Passionfruit

METHOD:

Base:

  1. Place all base ingredients into a high speed blender and blend until combined and of a grain-like consistency.  (I used my thermomix 25 seconds/speed 8)
  2. Empty into a freezable container or lined baked tray about 10cm x 20cm and press mixture firmly with fingers to make base.

Top:

  1. In a small mixing bowl, mix all top ingredients together
  2. Pour on top of base and place in freezer to set for about an hour (this makes it easier to cut)
  3. Cut into pieces and store in an air-tight container in the fridgeRaw Passionfruit Slice

NOTES:

Sunflower seed meal, pepita meal or almond flour can be substituted for the coconut flour for the base.

Cashew butter can be substituted for the coconut  butter for the top.
