Miss 8’s Chocolate Biscuits

Gluten Free, Dairy Free, Nut Free, Egg Free and Refined Sugar Free

Makes 12-14

I love that my daughter loves to cook!  Last weekend she spent some time going through some cookbooks and then made some changes to a recipe so that she could make some biscuits that she and her brother could eat.  She was so excited that they turned out after the changes and she loved them.  This is what she come up with:

  • 1 cup Gluten Free Flour
  • 1 t Gluten Free Baking Powder
  • 1/4 t fine Himalayan Salt
  • 3/4 cup Rapadura Sugar
  • 1/4 cup Cocoa
  • 2 T Chia Seeds (mixed with 4 T purified water)
  • 2 T coconut oil (melted if it’s cold)
  1. Preheat oven to 170 degrees (fan forced)
  2. Mix chia seeds and water together into a cup and sit aside
  3. Place all dry ingredients into a bowl and mix together
  4. Add all wet ingredients into the bowl and combine together
  5. Place spoonfuls of mixture onto a greased baking tray
  6. Bake for approx. 15 minutes
  7. Allow to cool for 10 minutes before placing biscuits onto airing tray to cool.
