Minty Choc Fudge

Mint Chocolate Fudge

Free from gluten, dairy, nuts, eggs and refined sugars

With our family avoiding so many foods, these fudge bites are a perfect snack for when the kids go to bed or a great lunch box addition..  I’ve just made these up for the kids and there reaction was – these are the best mum!

INGREDIENTS:

  • 1 heaped cup desiccated or shredded coconut (100g)
  • 25 pitted dates (150g)
  • 1/2 cup pumpkin seeds (70g)
  • 2 Tbspn cocoa or cacao
  • 1 tsp natural peppermint extract (about 5 drops of food grade essential oil)
  • 3 drops peppermint essential oil (food grade)

METHOD

  1. Place everything (except peppermint) into a blender or thermomix and blend until ‘fudgy’ consistency
  2. Add peppermint and blend for another 10-20 seconds
  3. Empty into lined 20 x 15 cm dish or your favourite silicon molds
  4. Place into fridge for aN hour and cut into squares about 2cm x 2cm
  5. Store in the fridge in an air tight container

Enjoy!!

NOTES:

This recipe is easily amended.  Add in a tablespoon of chia seeds or substitute the pumpkin seeds with nuts if your diet allows it.

    Can I add in a pinch of coffee to this recipe?

    • I haven’t tried coffee Ema, but I think it would taste fantastic! I might try it next time without the peppermint. Let me know how you go! 🙂
