Mint Chocolate Balls
Gluten, Grain, Dairy, Egg, Nut and Refined Sugar Free

Makes 12
INGREDIENTS:
- 1 cup (140g) sunflower seeds activated or raw *(see notes)
- 2 tablespoons cacao powder
- 3 tablespoons coconut flour
- 1-2 tablespoon coconut oil
- 1 tablespoon raw honey
- 1 teaspoon vanilla extract
- 3 drops food grade peppermint essential oil
- pinch of salt
- 35g sultanas
METHOD:
- Place seeds into a blender or thermomix until a flour consistency (thermomix 9 seconds speed 9)
- Mix in cacao powder, coconut flour, coconut oil, honey, vanilla, peppermint, salt. The mixture may look a little dry but should βballβ together. If you find that it still doesnβt, add another tablespoon of coconut oil. (This depends on how much moisture is in the seeds).
- Add in sultanas.
- Roll into golf ball sized balls and allow to set in the freezer for 1 hour.
- Store in the fridge or freezer in an airtight container.
NOTES:
* I activate seeds for easier digestion, but raw seeds will work just as well.
If you are able to tolerate nuts, they can be easily substituted in this recipe.
