Gluten, Dairy, Eggs, Nuts and Refined Sugar Free

INGREDIENTS

  • 125g Dairy Free Butter
  • 100g Rapadura
  • 260g Gluten-Free Self-Raising Flour
  • 2 tsp Vanilla Extract
  • 2 tsp of arrowroot mixed with 2 Tbl water
  • 3-4 Tbl of Jam of choiceΒ (see notes)

METHOD:

  1. Pre-heat oven to 180 degrees
  2. Cream dairy free butter and Rapadura together
  3. Add flour, vanilla and arrowroot mixture and mix until combined
  4. Roll into golf ball sized balls and place on prepared baking tray
  5. Place a small hole into the centre of the ball and add about 1/3 of teaspoon of jam
  6. Bake for approximately 13 minutes or until golden brown
  7. Allow to cool before removing from the tray
  8. Store in an air tight container

Notes:Β  If I don’t have any home-made jam I buy St Dalfour jams, they are made from 100% fruit with no added sugars.
