Honey Roasted Carrots



Honey roasted carrots are a great side dish to add to your week day meal, the perfect mix of sweet and savoury.




INGREDIENTS:


  • 500g carrots (baby carrots or larger carrots cut into 3cm chunks)
  • 40g raw honey
  • 1 teaspoon garlic powder (or 1 clove garlic diced)
  • 1/3 teaspoon ground ginger
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon himalayan salt
  • 1 tablespoon extra virgin olive oil


Honey Roasted Carrots




METHOD:


  1. Preheat oven to 220 degrees
  2. Mix all ingredients except carrots in a jar
  3. Place prepared carrots and honey mixture into a bowl and coat carrots well
  4. Position carrots onto prepared baking tray so they are not overlapping
  5. Cook in oven for 30 minutes, turning at about 20 minutes
  6. Delicious served warm or cold
