Honey Roasted Carrots

Honey roasted carrots are a great side dish to add to your week day meal, the perfect mix of sweet and savoury.
INGREDIENTS:
- 500g carrots (baby carrots or larger carrots cut into 3cm chunks)
- 40g raw honey
- 1 teaspoon garlic powder (or 1 clove garlic diced)
- 1/3 teaspoon ground ginger
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground pepper
- 1/4 teaspoon himalayan salt
- 1 tablespoon extra virgin olive oil
METHOD:
- Preheat oven to 220 degrees
- Mix all ingredients except carrots in a jar
- Place prepared carrots and honey mixture into a bowl and coat carrots well
- Position carrots onto prepared baking tray so they are not overlapping
- Cook in oven for 30 minutes, turning at about 20 minutes
- Delicious served warm or cold
