Homemade Tomato Relish
As a child I have fond memories of my parents preserving in the kitchen. One of my favourite was tomato relish!! Iβd like to share my version with you. I give my jars nice homemade labels and they make great gifts.
- 1.5 kg tomatoes chopped (the riper the better)
- 3 medium onions
- 1/2 cup himalaysian salt
- 1 1/4 cups white vinegar
- 1 1/2 cups raw sugar
- 2 tablespoons curry powder
- 2 teaspoons mustard powder
- 1 tbspn plain gluten free flour mixed 2 tbspn water
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- Place tomatoes and diced onion into a large bowl. Add salt and cover with water overnight.
- Drain off liquid and place in large saucepan with vinegar and bring to boil.
- Add sugar, curry powder, a mustard powder and flour mixture. Being to boil and cook for 5 minutes. Simmer for 30 minutes stirring often to avoid catching.
- Meanwhile sterilise 4 jars (by placing jars in moderate oven for 10 minutes, turn oven off and allow to cool)
- Remove relish from stove and add final two ingredients and place in jars
This recipe is easily doubled which I normally do. The gluten free flour is easily substitute with one of your choice.
