Homemade Tomato Relish

As a child I have fond memories of my parents preserving in the kitchen. One of my favourite was tomato relish!! I’d like to share my version with you.  I give my jars nice homemade labels and they make great gifts.

  • 1.5 kg tomatoes chopped (the riper the better)
  • 3 medium onions
  • 1/2 cup himalaysian salt
  • 1 1/4 cups white vinegar
  • 1 1/2 cups raw sugar
  • 2 tablespoons curry powder
  • 2 teaspoons mustard powder
  • 1 tbspn plain gluten free flour  mixed 2 tbspn water
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  1. Place tomatoes and diced onion into a large bowl.  Add salt and cover with water overnight.
  2. Drain off liquid and place in large saucepan with vinegar and bring to boil.
  3. Add sugar, curry powder, a mustard powder and flour mixture.  Being to boil and cook for 5 minutes. Simmer for 30 minutes stirring often to avoid catching.
  4. Meanwhile sterilise 4 jars (by placing jars in moderate oven for 10 minutes, turn oven off and allow to cool)
  5. Remove relish from stove and add final two ingredients and place in jars

This recipe is easily doubled which I normally do.  The gluten free flour is easily substitute with one of your choice.
