Homemade Pikelets

Gluten, Dairy, Egg, Nut and Refined Sugar Free

Since starting on our allergy food journey, one thing that I have missed is ‘real’ tasting pikelets.  I’ve made plenty of pikelet recipes I’d found, and have experimented with many of my own, this recipe comes the closest to a normal pikelet that I’ve tried.

Homemade Pikelets

INGREDIENTS:

  • 1 cup (150g) Gluten Free Plain Flour
  • 1 tsp Tapioca Flour
  • 50g Rapadura
  • 3/4 – 1 cup Coconut Milk

 

METHOD:

  1. Place all dry ingredients into a bowl
  2. Add coconut milk gradually to dry ingredients mixing after each add, until consistency is of a thick mixture.
  3. Preheat frypan on medium heat.
  4. Spoon soup spoon sized amounts of mixture into frypan.  Cook until bubbles start to form on top and flip and cook other side.  (about 1-2 minutes each side)
  5. Place aside and cook remaining mixture.
  6. Serve with jam and whipped coconut cream.
