Homemade Grain & Nut Free Granola
Gluten, Grain, Dairy, Egg & Nut Free
INGREDIENTS
- 50g Pumpkin Seeds (pepitas)
- 50g Sunflower Seeds
- 30g pitted dates
- 75g Raisins
- 1 Tbl Coconut Sugar (opt)
- 20g coconut oil
- 1/3 Tsp Ground Cinnamon (opt)
METHOD
Preheat oven at 160 degrees
Place all ingredients into a thermomix (Speed 6/10 Seconds) or high speed blender until just combined
Empty mixture onto lined baking dish and spread thinly.
Bake for 10 minutes. The mixture should just start to brown on top.
Mix and return to oven for 5 minutes
Remove from oven. The granola should be o nice golden brown colour.
Depending on your oven the granola may require another 5 minutes of baking
Allow to cool and store in an airtight container out of the fridge.
NOTES:
Always use organic and preservative free seeds and fruit when you can
The raisins can be changed for other dried fruits
This is a very versatile recipe – add different seeds and nuts (if you can tolerate)
Serve with yogurt, ice cream or even a fruit salad.
