Healthy Avocado Icing
Gluten, Grain, Dairy, Egg, Nut & Refined Sugar Free – GAPS/Paleo/Vegan
Ok – I maybe using ALOT of avocados lately , but trust me it is totally worth it!! 😜

To make these christmas cupcakes, simply use your favourite cupcake or muffin recipe (this is ours here) with this healthy avocado icing and top with a strawberry with the base cut flat.
INGREDIENTS:
- 1 x Medium Ripe Avocados
- 35g Maple Syrup or Raw Honey* (see notes)
- 1/2-1 tsp lemon juice (to keep from going brown)
- 1 tsp Vanilla (opt)
- Pinch Salt (opt)

METHOD:
- Place all ingredients in a blender or bowl and blend or mix together until smooth.
- Taste and add more sweetener if needed.
- Place covered in fridge until needed.
NOTES:
- to make GAPS friendly, you will need to use raw honey
- If the avocado you use isn’t a firm holding avocado, you can always mix 2 tablespoons of melted coconut oil to the blended icing mixture and allow to set in the fridge. This will ‘harden’ the icing making it more manageable to use.
- The icing will keep in the fridge covered for a few days
- Once you have decorated your cake, it will need to be kept in the fridge.
